Jump, Jump!

Yesterday we went to Jump zone with some friends. They have inflatable games and slides for the kids to play on. Ashlyn had a blast! She gets intimidated and upset when older kids get in her face but she did really good. She was worn out by time we got home!



I am still in complete shock with Ashlyn's potty training progress. She has not had a single accident in her panties and continues to take herself to the bathroom without any prompting from me.
We are starting to get things together for Ashlyn's big girl bed. We have a head board on order and hopefully will get it all put together next weekend. I have been looking for bedding to match the decor that is already in her room. Everything I liked was $75-$100 just for the comforter and I just find that insane for a kids room. A friend of ours was able to find really cute bedding that had all the colors I was looking for plus the bed skirt, pillow sham, and throw pillow for a steal! I also found a cute striped rug at the associate store for $15. I got that when Ashlyn was at Grandma and Grandpa's and already put it in her room. She thought it was the neatest thing! She still likes to run her fingers and bare feet through the long fibers.
Last weekend I made a really yummy Peanut Butter pie. I have been searching for the perfect recipe. We ate a pie at a local place here in town and fell in love and I just had to duplicate it! Here is the recipe for those of you who are big peanut butter fans like we are!



Peanut Butter Pie

9" Pie Crust
1 cup confectioners' sugar
1/2 cup peanut butter
2 cups milk
2/3 cup white sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
4 tablespoons cornstarch
3 eggs, separated

1/4 teaspoon cream of tartar
1/2 teaspoon vanilla
6 tablespoons white sugar

Partially bake pie crust by lining inside of crust with a double thickness of foil, bake at 450' for 8 minutes. Remove from oven and lower temperature to 325'.
Mix confectioners' sugar and peanut butter until mixture has a crumbly texture. Sprinkle half over the bottom of the shell.

In the top of a double boiler, combine milk, white sugar, salt, vanilla, cornstarch, and egg yolks. Cook over medium-low heat until thick. Pour filling into crust.

Beat egg whites until foamy. Add cream of tartar, and vanilla, continue beating until soft peaks form. Add sugar one tablespoon at a time and continue beating for 4 minutes more. Spread over the top of the pie. Sprinkle with remaining peanut butter mixture.

Bake at 325' for 30 minutes.

Hooray for Ashlyn! I'm so glad potty training is going so well. I'm going to have to try that pie. Jonathan and I rarely find desserts that both of us really like, but I think this one will be a hit. :)

I just wanted to tell you that I tried and failed miserably to make this pie. I don't have a double boiler so it was a mess! Never mind the fact that it has about 900 steps... Next time I'm sticking to no-bake haha :) Maybe someday I can graduate to the oven!
