This week we have a lot going on so my meals are pretty easy. We are having a little get together at the park Wednesday for Aubrey's birthday and I'm going to make some cute little cookies for her friends. I can't wait, I've been itching to decorate some cookies!!
Monday- Left Overs
Tuesday- Roast Hash, Toast, Carrots (moved over from last week)
Wednesday- Split Pea and Ham Soup, Cornbread
Thursday- Aubrey's Birthday! Dinner at her favorite, Chick-fil-A
Friday- Italian Meatloaf, spaghetti with tomato sauce, green beans
Saturday- Homemade Pizza (with this crust), salad
Sunday- Tacos, corn
Once a month I volunteer to take brunch to our Worship Team on Sunday morning. They are at the church from 7am to 1pm leading us in Worship so a little something to snack on mid-morning is just what they need to stay energized and eager to serve. This is what I'm making this Sunday.
Pumpkin Chocolate Chip Bread- This is so good and the second loaf freezes wonderfully!
Brunch Egg Casserole- I love that you make this the night before. Makes for a quick easy morning!
Sausage Balls (Double the Recipe)
Sausage Balls
1lb Ground Breakfast Sausage
1 1/2 Cup Biscuit Mix
1 Cup Shredded cheddar cheese
Combine all ingredients. Form into walnut sized balls and place on a baking sheet. Bake at 350' for 15-20 minutes until browned and cooked through. Place on paper towels to cool.
I combine the ingredients in my KitchenAid. It goes so much faster and you don't get cramps in your hands, especially when doing a double batch. :) I also form the balls the night before and refrigerate them on the baking sheet so they are ready to bake in the morning. I either let them warm to room temperature or just cook them a minute or so longer.
