Menu Planning

Monday- Salad and Sandwiches (Body Life Group)

Tuesday- Eggplant Parmesan, Corn

Wednesday- Taco Soup, Quesadillas

Thursday- Left Overs

Friday- Chicken and Apple Curry (new recipe), rice, green beans

Saturday- Roast, potatoes, carrots

Sunday- Roast beef hash, okra, toast


One of my favorite things to do with leftover roast is to make hash. I don't really have a recipe because it's just a throw together meal. First I peel and cube a potato or two into bite sized pieces and cook it in an oiled skillet. While the potatoes are cooking and browning I cube the roast into the same sized pieces as the potatoes and set it aside. While the potatoes are still softening up I make a small sauce pan of brown gravy with the leftover juice from the roast. If you don't have any leftover juice you can use a can of beef broth or a packaged mix. Once the potatoes are fork tender I add the roast and heat it through, then pour the gravy over the potatoes and roast. Let the meat, potatoes, and gravy, simmer for several minutes to allow the meat and potatoes to soak up some of the gravy. We like to eat this over toast!
